Last week, we discussed the Keto which is a very low-carb, high-fat diet. Unless planned well, you are setting yourself up for failure. This week we rounded up a few recipes that are delicious and help those looking for a low-carb and high in healthy-fat diet, the latter of course manageable depending on your health condition.
Keto Cheese & Chive Scones
Ingredients (makes 15 scones)
1 ½ cups (150 g) almond flour
¼ cup coconut flour (30 g)
¼ cup flax seeds (42 g)
1 tsp gluten-free baking powder
4 slices bacon (120 g)
2-3 tbsp chopped chives
50 g cheddar, grated (1.8 oz)
3 tbsp unsweetened almond milk (45 ml)
2 medium eggs
¼ tsp sea salt
½ tsp cracked black pepper
Note: Instead of whole flax seeds that will be ground, you can use an equivalent amount of ready-made flax meal.
Instructions
Preheat the oven to 190 C/ 375 F. Blitz the flax seeds in a blender until fine, or optionally use ground flax seeds.
Combine the ground almonds, flax, coconut flour, baking powder, chives, cheese (reserve some for topping), chives, salt and pepper in a mixing bowl. Combine.
Chop the bacon fine and fry in a dry non-stick pan for about 3 - 4 minutes until cooked. Allow to cool.
In a cup, crack open the eggs and whisk with the almond milk using a fork.
Add the dry ingredients to the wet (almond mix to egg mix) and fold to form a dough. Stir through the bacon.
Roll the dough between two sheets of greaseproof paper until about 1 cm thick.
Cut into small scone shapes using a cookie cutter (6 cm/ 2 ½ inch). Re-roll the ‘dough’ until all the mixture is used up.
Bake in the oven for 15 minutes. After 10 minutes, sprinkle on the rest of the cheese and place back in the oven for the remaining 5 minutes.
Avocado & Egg Fat Bombs
Ingredients (makes 5 servings)
3 large cooked egg yolks
½ large avocado, peeled and seed removed (100 g)
¼ cup mayonnaise (55 g)
1 tbsp lemon or lime juice
½ tsp salt or to taste
freshly ground black pepper
2 tbsp chopped spring onions or chives
Instructions
Start by cooking the eggs. Fill a small saucepan with water up to three quarters. Add a good pinch of salt. This will prevent the eggs from cracking. Bring to a boil. Using a spoon or hand, dip each egg in and out of the boiling water - be careful not to get burnt. This will prevent the egg from cracking as the temperature change won’t be so sudden. To get the eggs hard-boiled, you need round 10 minutes. This timing works for large eggs. When done, remove from the heat and place in a bowl filled with cold water. When the eggs are chilled, peel off the shells.
Place the avocado cut into pieces into a food processor and add the egg yolks, mayonnaise, lemon juice, salt and pepper. Process until smooth. Alternatively, mash with a fork until creamy and well combined. Place scoops of avocado in egg white halves and enjoy!
Ingredient Salmon Mousse Cucumber Rolls
Ingredients (makes 30 rolls)
8 oz cream cheese (226 g)
4 oz smoked salmon (113 g)
1 tbsp fresh dill + more for garnish
½ lemon, juiced (about 2 tbsp)
2-3 cucumbers (900 g/ 2 lbs)
Instructions
Place the cream cheese, salmon, dill, and lemon in a food processor and blend until smooth.
To assemble take a slice of the cucumber, which you can shred into long slices and spread a layer of salmon mousse on the top. Roll up tightly, it should hold perfectly.
