Syeda Amtul Saudi Gazette Food-lovers in Jeddah are well-versed with this unique high-spirited Moroccan cuisine restaurant that offers authentic Moroccan cuisine at Andalusia in Park Hayatt Jeddah. The restaurant offers traditional Moroccan cuisine in an elaborate buffet that is being prepared by Moroccan chefs under the guidance of Chef Adil Bouaicha with over 30 years of experience in the trade. As olive oil, pure saffron, cinnamon, lemon and rose water are the main components of Moroccan cuisine, Chef Bouaicha serves traditional Moroccan delicacies, starting with an array of hot and cold salads followed by tagine, couscous, pastille and a succulent assortment of mixed grills marinated in Moroccan herbs and spices. “The restaurant offers a variety of pure Moroccan cuisine, which is very light to eat, with low carbs and we mostly use over oven baked fresh breads and very rarely use rice,” he told Saudi Gazette. DSC_0161  “Moroccan food uses a variety of vegetables and meat and almond paste is used in most desserts.” The variety of salads include sweet pumpkin with rose water, and Zaalouk (eggplant salad) which is a delicious cooked salad made with aubergines, tomatoes, garlic, olive oil and toasted cumin. For spicy food lovers, there is a couscous salad served with Harissa sauce, a hot and spicy sauce made with red chilies and olive oil. DSC_0156 The soup, which made of tomatoes, lentils, chickpeas and lamb, was rich and creamy and a great starter. It is finished off with a squeeze of lemon juice and some chopped coriander. The salad bar also serves the usual Arabic and continental salads. The restaurant offers truly authentic Moroccan dishes include lamb tagine, chicken tagine, roast potatoes, salmon steak with vegetables, sea bass tagine, couscous tfaya, couscous with vegetables and vegetable sauce, and many more. The dessert buffet includes a number of continental dishes apart from special Moroccan delights, some of which include Kaab el Ghzal, a pastry stuffed with almond paste and topped with sugar, Moroccan Almond Briouats with Honey, and Sellou (also called sfouf or zmita), a unique Moroccan sweet made from toasted unhulled sesame seeds, fried almonds and flour that has been cooked slowly in the oven.
